剁椒魚頭

食材：
魚頭一顆
蒜頭約15-20顆（不喜歡可減少）
生辣椒適量（喜辣的可多加）
不喜辣的可改加青蒜或不加
自製剁椒醬3-4大匙
蔥花或青蒜適量
香菜適量
薑片數片
調味料：
甘甜醬油或蠔油1大匙
米酒1大匙
糖1小匙
冷壓酪梨油適量（最後油潑用）
做法：
1.魚頭的底部、上方鋪上幾片薑片或蔥短皆可，蒜頭、辣椒切末，怕辣的不需另外加入新鮮辣椒。
2.熱鍋加油，將蒜末（辣椒末）放入爆香，加入剁椒醬拌炒及所有調味料拌炒至香味四溢，起鍋備用。
3.將炒好的步驟2.平鋪在步驟1.的魚頭上，放入蒸鍋或蒸爐水蒸，從蒸汽開始出來時放入，計時10-12分鐘（視魚頭的大小微調時間）。
4.魚肉蒸好後取出，灑上大量蔥花，起鍋加入約5-6大匙的油燒熱後，油潑淋在蔥花上方，激發香氣，最後再撒上大量香菜末即可！（不喜香菜可不加或用青蒜取代）
